Lost pdfs on iBooks when they didn't back up

I saved stuff like pdfs of bus timetables on the iBooks app. I backed up the phone to iTunes but the backup didn't include the documents. My settings showed that I was also backing up this particular app to iCloud.

How can I get back the documents? Thank you
