An example which occurred today operated by unit 158.731.
2W64: 1602 ex Anniesland to Glasgow Queen Street arr. 1624 (approx 5 miles).
1L53: 1710 ex Glasgow Queen Street to Dundee arr. 1858 (approx 64 miles).
Any more extreme examples of where the same unit happily operates a very short journey and a fairly lengthy journey
as part of the same diagram? Both journeys require to be passenger carrying journeys.

Not sure on specific distances, but you have TFW units that will run between Llandudno Junction and Llandudno itself (around 3 miles), before then heading off for say Manchester Airport (just under 100 miles).
Edited to add distances.

How about the units that run the Yeovil Pen Mill - Junction shuttle before heading back to London.

~10 miles to Oxenholme
~92 miles to Manchester Airport

Train arrives from Airport, goes to Oxenholme and back twice then goes back to the airport

Historically a Wrexham-Bidston diagram started with Wrexham General - Wrexham Central (0.6125 miles), compared to Wrexham Central - Bidston (27.5 miles)

Unit 170.431 today worked 1B24 0942 ex Inverness - Edinburgh arr. 1314 (c. 187 miles)
then 2G75 1445 ex Edinburgh - Cowdenbeath arr. 1531 (c.22.5 miles).

Do any of the (former) Southern Region operators have units which work up to London from their coastal extremities and then cover a suburban trip?

How about the units that run the Yeovil Pen Mill - Junction shuttle before heading back to London.
That's one I was thinking of, in the current timetable the 17:53 Waterloo - Yeovil Junction (via Westbury) [141 miles, 10 chains] will do a couple of Pen Mill shuttles [1 mile 62 each way] before heading back to Salisbury (via Westbury). Although not as extreme as some examples, although probably percentage wise it will probably be high.

Sometimes the Pen Mill shuttle even carries a passenger!

One of the Chiltern 3 car 168s: does 1H22 0745 Moor Street - Marylebone (111mi 56ch), does a couple Oxfords, then eventually does the 2R53 1753 Marylebone - West Ruislip (13mi 30ch)

Sunday evenings have a King’s Cross to Finsbury Park service, which over the few years it has operated has been variously formed from diagrams which have included King’s Cross to Kings Lynn, King’s Cross to Peterborough and possibly Brighton to Cambridge services.

Scotrail class 170 on diagram HA719 works 2A64 08.47 Inverurie to Aberdeen which is just 16 miles then later in the afternoon does 1A69 14.10 Glasgow to Inverness via Aberdeen which is 237 miles. It then goes straight back to Glasgow as 1T94 at 20.22 for a further 180 miles.
