If you are after units then Bethnal Green is slightly better as you don't have the risk of a Central line service blocking viewing of a Liverpool Street bound 315/345

However you might want to see the DLR, London Overground and the possibility of a freight service in which case Stratford gives you that option. If you travel to and from Liverpool Street you will see a good mix.

Liverpool St would be a bit difficult to see everything as the station is effectively split in two. Standing at the end of pfm 11 in the dark would be depressing. Bethnal Green is better but just passenger trains. Stratford is more interesting because of the freight. Usually see enthusiasts at the London end of platforms 9/10. Any up 315 / 345 on the up electric line (Pfm 5) will return back down about 30 minutes later.
