I think in order to travel on the tube in zone 1 you'd need a ticket to "London U1". That would give you a single journey on the tube.
London Terminals gets you as far as the London Terminal.
If you have a ticket between destinations which is valid via London, such as Reading - Peterborough, you can use the tube for one tube journey on each leg of your journey (i.e. out and return)

Okay then, an additional question. I'm going to buy an Oyster card while I'm down there to use. I know about the fare caps in place so you can't spend more than a certain amount in a certain zone range, but does this apply to buses and trains, or are there separate fare caps for each?

There are different price caps depending on mode of travel i.e. buses and tube have different caps. Caps also depend on which zones you travel through and the time of day.

A London Terminals ticket is valid to the furthest London Terminal from your origin without using the Underground. For example someone travelling to Waterloo can continue to Charing Cross or London Bridge via Waterloo East. You'll need the destination to be ZONE U1* LONDN to go to Euston/Paddington etc as it involves using the Underground.

There is a bus/tram fare cap which is now £4. If all you use are buses and trams then this is all you will pay all day. If you have used buses and then use a train (includes NR, tube, and DLR) then your bus usage also counts towards your travelcard cap for the whole system. If all travel is after 9.30 (or at weekends, ie off-peak) then you will have caps of £6.60 (zones 1-2), £7.30 (1-4), £8 (1-6) or £11 (1-9). Sadly there is no longer a cheap cap for avoiding zone 1. Your travelcard cap is fixed depending on which zones you use for trains. You can use buses throughout London with any cap, while tram usage will trigger at least a zone 1-4 travelcard. However, you will only pay the cap if the sum of your single journeys exceeds the relevant cap.

If you travel before 9.30 on Mondays to Fridays then you will trigger the peak travelcard caps, unless your pre-9.30 travel is not enough to cover the difference between the peak and off-peak caps.

it's worthwhile to promote exceptions or info that isn't often documented by tocs - such as fcc tickets on the great northern route to london terminals are valid to moorgate via the tube without any travelcard or zone u1 etc

This is inaccurate. London Terminals tickets do not permit travel through the Snow Hill tunnel. Also Zone U1 is not available as a destination from all places - a ticket with validity including U1 is what is actually required. This can be U1, U12, U123, U1234, U1245 or U1256 depending on the origin.
Often it's cheaper to get an ADT if it's available.

I thought Thameslink counts as a cross-London transfer and so would be akin to using the Underground. I'll elaborate on my previous point further:

A London Terminals ticket is valid to the furthest London Terminal from your origin without using the Underground provided it is a permitted route. The only case I can think of is Waterloo - Charing Cross/London Bridge via Waterloo East.

No it isn't, you can't use a Brighton - London terminals station to St Pancras. On to City Thameslink (?)

Is 'On' supposed to be 'Or' or 'Only'? Whatever, the Thameslink restriction is not valid at or via Farringdon. So from the south it is as far as City Thameslink while from the north it is as far as St Pancras. However, I think there is a special destination from the north (London Thameslink?) which includes Farringdon and connections onto the Underground to Barbican and Moorgate.

Assuming you're travelling from Merseyside (which is shown as your location.)

A "London Terminals" ticket allows you to travel on any permitted route to London, assuming it's not an advance which restricts the route. Permitted routes I'm aware of are using VT's Liverpool-London service, using another VT service from Crewe, using LM's Crewe-London service and travelling via Birmingham. Once you've reached a London terminal your ticket has expired.

You can also use a "London Eurostar CIV" ticket which allows you to travel on the Underground between the terminal you arrive at and St Pancras only.

There's also tickets for through travel via London, such as to Brighton, which allows you to use the Underground between different London terminals.

The two above instances do not allow you to break your journey at an intermediate Underground station.

You have to produce your Eurostar ticket when you ask for a London International CIV ticket though...
