Check on TransPennine Express's website. They offer some fantastic deals. Even 3 weeks in advance, I got from MAN to York for under a tenner with a railcard. You should be able to buy a bargain with advance tickets.

You say you are travelling "Off peak" but there is no "peak" time for this flow, so any time is off peak. Peak times vary considerably depending on the ticket held. If you split the ticket at places like Manchester, then there will be peak restrictions, but the through ticket is unrestricted. The SVR fare, valid at any time, is discounted to £35.95 with a Railcard and is equally valid via Leeds or via Sheffield, you could do one way there and one way back if you wish.
TPE do Advance fares at 50% off if you have a 16-25 Railcard, but only if booked on their site. They call this a Student promotion but you don't have to be a student.

Getting the TP 50% discount can be a bit problematic.
To get the complete list of available services you will need to book as two singles.
The outward shouldn't be a problem, but the return is difficult to get to because it's usually a bit quicker to take a Northern service from Manchester.
Anyway, go through the student 50% off link, put in your return date and say 'after 15:00', and you should get the option of the 15:40.
Now you can click on the 'Click here to check if slower routes with cheaper tickets are available.' at the bottom.
Now click on the topmost 'check for trains button' and you can move through the available times to find one that suits you.
I tried this for 3rd / 4th, it's no problem getting a return for £13.30.
