Is it true that the 315's will be replaced after the olympics?

Where did you read this? As I understand it the 315s will soldier on until Crossrail is ready to commence operation.

That still doesn't cover 2014-2018 / 2019 when Crossrail is due to open though...

The Crossrail build up plan allows for a period of Crossrail spec trains running into Liverpool St vice 315s - the Greater Anglia franchisee is required to separate the Shenfield service from everything else at some stage and run it as a mini-franchise with its own management and staff diagrams, so that the people concerened can be TUPEd over to Crossrail in due course.

Whatever the dates were I believe thay have moved right, because Crossrail's delivery period has been shortened.

I will be sad to see the 315s go, excellent suburban trains. But CrossRail only covers the Shenfield metro, there are some West Anglia routes that use 315s - presumably there are no plans to replace these yet?

Will need a big cascade plan for that area to entirely replace the 315s including the Lea Valley units.

Will the same be happening over on the west side too? If so will they be using 345s prematurely as well (post-GW electrification of course)?

I think they might be running into Paddington vice Heathrow Connect stock at least. If they don't do this there'll be a problem with lack of driver knowledge on the day the core tunnels open.

(By the same logic people have pointed out that the new Thameslink stock might have to appear on various SN and SE routes (that will eventually be transferred to T/L) some time prior to 2018...)
