There's a possibility that I may return from my next Interrail expedition with an unused day on my Pass.

Can I use this day on a future trip if I have used my Outbound and Inbound Days, or does the validity expire once the Inbound Day has been used?

Completely valid. I did a trip Lancs to Liechtenstein via Switzerland, Germany and France, which I used 3 days of my 4 day Interrail on. I then used the 4th day on a separate trip to Ireland with no issues at all!

Absolutely no issue with using either your outbound or inbound days in the middle of your travel days within the pass's validity.

I've just finished with a 15 day Interrrail.

My inbound day was day 13, my outbound was day 14. No issues at all.
