So someone boards at Stevenage, revenue approach them for their ticket, the response is “I go London”, which gets repeated multiple times in response to every question asked, you tell them they’re going to get turfed off at Finsbury Park, which is the next station. Upon arrival there they walk away with a smirk on their face, straight down the (ungated) spiral staircase down to LU for the next stage of their free journey. It wouldn’t make any difference if there was a gateline as they’d just push through, in the same way they probably had at Stevenage.
Just because you can't get them every time, doesn't mean that fate won't catch up with them and they walk straight into BTP. Or find themselves on a train which is running fast to make up time and end up a long way from where they were intending to go (they might have noticed the announcement if they weren't so keen to hide in the toilet first)

Revenue protection only works if the people you are prosecuting actually have any money to extract

So what do you suggest, continue with the status quo and accept that fare evasion and anti-social behaviour, which go hand in hand, are acceptable?

Fair enough but these are 20 and 30 year old units, not modern class 700s.

700s are bad. ASLEF need to campaign for better cab sound proofing. If tiny beeps from a smart watch are deemed a distraction, a loud conversation or loudspeaker smartphone noises directly behind the driver are even worse.

And provide genuine details, not just the details of a random person they found the address written on a thrown away letter.

Not a lot you can do with kids, try and throw them off and their parent(s) soon kick off about safeguarding and how dare you throw their little darling off at such a station when his wallet was stolen (or other made-up excuse) etc. Some kids collect Unpaid Fare Notices for fun knowing the operator won't take them to court due to being under 16 etc.
