I would like to drive a pair of Warships on the Cornish Riviera, please.
I am quite happy to drive in the 'official' WR hydraulic manner, which is to put the locos on full power as soon as possible after leaving Paddington and if they have not failed by Old Oak then they should be good to get to Plymouth. (I'm not sure if the locos were changed there or not on that service).
Oh yes, the through road at Reading and then full power again all the way, once onto the Berks and Hants, especially with 14 on in true 1968 style.

I live in the realm of sprinters and turbostars so rarely see an HST, only occasionally at Worcester Fgt St while waiting for my train

I first went on a HST when I was about four. Believe it or not, when I first saw one hurtling through the station at 100mph, I was scared of them!!!

Would love to drive a Class 37, preferably a Non-refurbished Splitbox, maybe 37087.
Would have to be the Highland Chieftain, northbound, duringt the summer months when it is still light on arrival at Inverness. A nice bit of 125mph running in the first part and excellent scenery thereafter.
If I could go back in time, it would be the ACE from Waterloo to Padstow with a West Country "Spam Can" on the front.

I'd be interested to learn how to drive a loco hauling a very heavy load over hilly terrain. There will never, now, be the opportunity to learn to drive a loaded steam loco properly, and I doubt there's as much to driving an electric loco as a diesel over difficult lines, so I'll go for a diesel loco with a coal train.
I'd agree with Bedpan that the Highland mainline would be a good route to navigate. I've admired the Deltic engine greatly, so perhaps my answer would be a Deltic hauling a heavy coal train From Inverness to Penzance via London!

How about the other way round via the lickey incline (Penzance-London-lickey-Scotland)
You'd be surprised how much 'skill' is still needed to drive a heavy freight on lines with severe gradients....on the Midland Mainline south of Leicester, you have to judge things just right, all the way to Elstree, if you're to keep time

The degree of skill probably wouldn't surprise me at all, but I'm sure it would challenge me to learn the relationships between, on the one hand the abilities and limitations of the machine, and on the other, the fixed and dynamic challenges of the gradients and the load.
I'd guess that regulars aquire an intuitive 'feel' for a route with a routine load, but I'm sure there are always variables in the weather, signalling and the stock which require judgements on a continuing basis.
[glad no one has asked what a fully laden coal train is doing running Inverness-Penzance! Its just an example. Anyway, I don't think I'd be too happy the moment the 1000 tonnes or more behind felt the need to comply with the pull of gravity after Slochd Summit]
