I've travelled on a fair few railtours: steam and diesel (sometimes both) and electric. A feature of most seems to be the onboard buffet and shop.
As a standard class passenger I wonder what your ideal buffet/merchandise set up would be?
To start the ball rolling I'd say it had to be a decent 0.5% ale in a bottle as I often need to drive home at the end of the day!
(PS if you travel first or Pullman you're equally welcome to share views though I guess in many cases your food will be provided as part of the ticket?).
