I travelled from Ramsgate to London Bridge and back today using a Super Off-peak Day return to London terminals. Non HS1

If when I arrived in London I wanted to come back on HS1 is there anyway I can upgrade/excess /whatever the word is or would I have to buy a brand new single ticket

My assumption is the latter

Pretty sure you can buy the supplement from any ticket office or SouthEastern ticket machine.

Change of route excess or a "HS1 supplement" which acts as the same thing.
