Weren't the pyramids fairly remote from anything else until recently, so little demand for stone. Also once they got beyond the facing stones, if they removed a couple of blocks from the bottom there would have been a risk of the next layer toppling down onto them. And the blocks are rather massive, unlike the Wall stones which are an ideal size for building things.
