I have family arriving from Toronto and Phoenix at Heathrow T3, arriving 1150 and 1340. The 3 will meet and travel together to Sheffield. 2 will then travel back a few days later.

Dates are
7 November, 3 people Heathrow to Sheffield after 1340 flight arrival.

10 November, 2 people Sheffield or Doncaster to Heathrow, for flight dep. at 1430 and 1500.

Is there a return that allows the 2 to travel EMR direct to Sheffield and back via Doncaster - there are no Sunday direct trains Sheffield to London.

The one way only 3rd person is a Senior so railcards are an option - Senior and Two Together.
How do advance tickets work with any late flight arrival, especially with the London peak departure fare increase.

Thanks in advance for any advice.

I would advise against getting an Advance ticket unless you give yourself some hour of buffer.

Though that may save you a pretty penny

By splitting their advances like the link above, they can save 50%.

No, because LNER has withdrawn return tickets which were routed ‘Any Permitted’. That would require two single tickets.
