Is there a reason they are timed for 75mph? That journey would be quicker on a horse by the time you factor in coaches from Runcorn!

Quite. Am I correct in thinking that there is or was a platform at Aintree that has been used fairly recently for some race day trains,?

It probably is the VSOE coaches which are restricted to 75 mph so timed to 75 mph !

I was under the impression the vsoe coaches could do more, but vsoe liked to keep them to 75 to avoid spilling the soup etc.

The extra platforms disappeared quite a few years ago now when the station was refurbished.
