Which end of Exeter St. Davids is the country end? And for that matter, which is the down end?

I would guess at the north end to both questions.

I'd say Plymouth end :/

I would say the country end and the down end is the Plymouth end.

The line to Exeter Central becomes Up where it diverges from the Plymouth line doesn't it?

Assuming that my assumption is correct that 'Up' is generally towards London, I'd say that as Exeter is a Great Western station, the north end is 'up' and 'down' is the Plymouth end.
