My plans have changed and now I need to depart Euston on Sunday at 1937 to Wolverhampton, I hold a Super Off Peak Return (outward portion using tommorow). How would I go about getting the correct excess? The ticket isn't valid on the train I require on Sunday.

Are you sure it isn’t valid? Looking at BR fares it looks like the return portion is only prohibited 1630-1830 on Saturdays and Sundays, so you should be good to go.
