Is there a way to find out if either of the trains I'm taking this week will be Class 374s?

Wednesday - train 9018 from STP, 1024 dep
Thuesday - train 9019 from paris, 1013 dep

Yes. Do a dummy booking on the loco2 website for first class. If the seat is in coaches 1, 2, 3, 14, 15 or 16 it is an e320, otherwise it is a 373.

Also if your train calls at Ashford it is a 373.

Seems my outbound may well be then. No Ashford call and first class in coach 16!

First time since 1994 I've gone economy but I will have to go for a walk and check out the train!

Icing on the cake would be my return on a refurbed 373 - have they all been done now?

So far there's only one fully refurbished set, plus one that's repainted but not refurbished.
So that really would be special then! I assumed they'd be speeding things up now they had some new trains. Oh well.

I see the Eurostar tradition of allowing the front end to look rather filthy is continuing with their new units too.. (Unless it's a trick of the light, but they certainly look it!)

Maybe its a subconscious way of making the trains look well used, and hence makes the service look really popular

Better phone signal on the 373s too. As in you can get some, which I struggled with on the 374.

What speed do these currently operate at?

Is it 186mph in the UK, and 200mph elsewhere?

186 mph. The LGV Nord is not currently cleared for 320 kph operation.

I heard somewhere (correct me if I'm wrong) that HS1 could do 200mph (i.e. 320kph), but perhaps that won't happen until the LGV Nord is 320kph cleared.

HS1 is limited to 230kph from St Pancras through to Ebbsfleet International due to the curves in the tunnels under London. It's 300kph from Ebbsfleet to Cheriton which is just over 40 miles. I very much doubt you'd see much benefit running at 320kph for that short distance given the time needed to accelerate and slow down for each end.

But the technology in the 374 is 20+ years more advanced than in the 373. Could they accelerate/brake to/from 320 in the same time/distance that a 373 can do 300? Or perhaps even quicker? Or is the profile the same as the 373?

Although 300 kph is permitted from east of Southfleet junction the combination of gradients and the Singlewell neutral section will mean achieving that is unlikely until somewhere in the North Downs tunnel to Boxley. Ashford has a 270 kph restriction so I think 300 kph is attainable only between the north downs tunnel and the lenham loops in the down direction a distance of around 30 km.
The 374s do accelerate a bit better than the 373s but gradients still pull them back on the climbs.

When was it decides 374s would replace most of the 373s and how many train sets will remain of both varieties ?

8 373s are to remain. Or perhaps it's 7. Either way, not very many. Can't for the life of me remember how many Velaros are due to arrive though; it's probably more than the current amount in service.

Yet I am sure wiki said there were currently 31 trainsets?

how many tiers of class do these new trains have? never travelled on eurostar

The same Wiki page states the fleet allocation as 27 in the Eurostar fleet and 3 in the SNCF captive fleet. I believe the 3 SNCF sets are already withdrawn and scrapped. 19 being sent to scrap would leave the 8 that are planned to remain, which with the 17 e320s gives a fleet of 25, not too far from the 27 they started with.
It doesn't explain where set 31 went though...

Did Eurostar make full daily use of the 27 "Three Capitals" units or were there a few long-term "Christmas trees"?

There are/were 31 Three Capitals units.

Units that are long-term OOU.

And my understanding was that the Class 374s were ordered to provide additional services and not just to simply replace a number of the 373s, is that not still the case?
