Could anyone provide an update on the number of 158s now refurbished and back in service with EMT? IIRC there are 25 in the fleet?

I keep an updated summary of all EMT refurbishments here, and detailed information can be found on 222001's website.
Two units are presently with Delta, both ex-Central Trains units, one of which was involved in a crash earlier this year. This leaves just two Green units out and about with East Midlands Trains.
