It used to be a Thursday, but it appears more often than not to be Friday these days.

Talking of AP tickets, is there any way of finding out when EC release tickets for services which have no AP tickets on the initial release for that day? A few times over the last few months I've had to buy tickets on a later than ideal service because no AP tickets were available for the one I wanted only to find that tickets for the service are released a few/several weeks later. I've rather not have to check the site every day.

You can register on the website for a contact email for the release of the tickets on the day you are interested in.

Have you checked who the operators of the later service are? And that the advance fares released later are not priced by a different Train Operating Company?

I am registered but that only tells you when the first tranche is released for that day - unless I'm missing something.
All the services involved are EC.

There is no realistic way of predicting when/if later batches of Advance fares will be released. You will have to make an alternative plan to take advantage of fares already on sale at the lowest possible price or take a gamble waiting which might not pay off.

Recently Advance fares for a Sunday were released around 2pm on a Monday - presumably upon the confirmation of no engineering work that day.
