Stood at the machine this morning and I see day returns for places like Leeds, Sheffield etc, but cannot see one for Manchester - just an anytime return - do they exist ?

Looking on BRFares only shows an Off-Peak Day Return. Travelling in the peak, there's only the Anytime Return.

Yeah that's what the guard has just told me, perhaps the places that Northern set prices for offer day returns, the EMT/TPE set route of the Hope Valley doesn't.

It's not that simple. For instance, Dore-Strines has SDRs but Dore-Marple doesn't. Both are set by Northern. There probably isn't a good reason for it; it's just how things turn out.
