Have a look at the Sledovani website (https://sledovani.55p.cz/) which gives diagrams (and on the day allocations if reported).

Look at the section headed "ČD - OŘOD střed (motorové)" then look for the relevant class/depot and it will take you to the diagrams/allocations.

Your best bet in Prague itself is the "Prague Semmering" Smichov-Zlicin-Hostivice which is a lovely run anyway and easy to find. IIRC S-Z is covered by central zone ticketing.
As well as https://sledovani.55p.cz/ which 43096 has linked (bits of it have an English option if your device won't oblige - go for "performance overview") there's
https://www.vagonweb.cz/razeni/index.php?rok=2024&lang=en
which you can search by timetable route number AND unit type.
Further out, line 212 up the Sazava valley is a good choice, but in general most short branch lines across the country are 809/810 worked.
Line 74 (or S23) Čelákovice – Neratovice to the NE of the city is also railbuses.

Not so far away and covered by the outer zones DPP ticket, the Benesov U Prahy to Sedlcany and Vlasim lines are 810 worked. The Zadni Traban to Lochovice line on the main line to Beroun. Some workings on the Louny -Kralupy line are 809. Most of the other small branches are 814 worked. If you are still there over the weekend, there are unit worked heritage services at normal fares - see https://www.kzc.cz/
