I'm wondering if there is a way to create custom 'go via' points for trains when you're editing a scenario. For example at Oxford you have the two through platforms and two through centre roads. If you want a train to go via a specific platform you just select the platform you want using the 'stop at/go via' command, but as far as I can tell there's no way to force a train's path to go along the through roads without, somehow, creating a custom via point (as there's nothing to select as the 'go via' point). So is this possible and if so how?

Yes, entirely possible.

When creating a scenario, the markers are located under Infrastructure (signal) tab on the middle left menu. You can then place and rename them, specifically on your scenario.

Beware though, that after placing them, the dispatcher won't recognise them straight away and will through up errors if you try to path through them. Just click the big arrow (bottom right) to play the scenario, saving as you go, then go back into the editor and they will be active.
