I have a Travelcard and advances singles to and from Eastbourne on a particular day. If I were to bring a child with me, I can see that Child Flat Fare Returns exist from Nunhead. However I live further along the line and these fares do not exist (and if they do exist they do not allow travel via London - big issue if I have advance singles from Victoria).

Any advice on what to do in this situation? The child is nearly 11 but does not have a 5-10 photo card.

Child flat fares* can not be bought by themselves, you’d have to get a regular child child ticket

*There are probably exceptions to this, maybe a ticket office could help you?

Tried the Victoria Station Ticket Office and would have sold a Child Flat Fare Return if I showed my ticket - I didn’t realise that there was not a valid fare from my station to Eastbourne

They can be sold separately to other tickets, but they must be used in conjunction with another ticket.

As you have an Advance ticket from Victoria to Eastbourne, you can buy Child Flat Fare tickets for the same journey. It's not clear what the problem is, or what relevance Nunhead has. Where are you travelling from, presumably with the Travelcard?

Probably due to mix TOCs. Usually flat fare apply on a single TOC journey

I’m travelling from a station on the Catford Loop Line with my travelcard to Victoria and then to Eastbourne with an Advance single

Govia Thameslink is the same TOC though?

Child Flat Fare, London Terminals to Eastbourne, route Any Permitted.
OP is travelling from Catford Loop stations via London terminals to Eastbourne. I suspect Catford Loop is priced as Southeastern area instead of Govia Thameslink, thus child flatfare cannot apply. That seems to be also the case of Thameslink North Kent Line services. Each area seems to have their primary TOC for fare setting purposes, no matter that TOC do serve or not.
Denmark Hill to Nunhead is priced as Thameslink stations.

I suggest, despite not abiding the rules to full extent, flip the journey for the child, to buy a Eastbourne to London day travelcard at £2, by searching a Eastbourne to Catford Bridge / Bromley journey

That would not be valid to return from Eastbourne as the return half would already have been used.

Depending on which flat fare ticket they can get, the OP's child needs a ticket to Victoria or Nunhead.
