(hopefully) Hypothetical one here:

If between the purchase of a ticket and it's expiration/validity date, the restrictions listed for the code on the ticket are changed, what happens?

The ticket as you purchased is valid as it was at the time of purchase, as this is what you contracted for when you purchased it. The contract (the NRCoT) does not include provision for these conditions to change after purchase, so they cannot change.

The difficulty would be proving that, of course, though if sold against an itinerary it can unquestionably be used to travel on that itinerary as booked regardless of whether it should have been sold on that itinerary or not.

What about season tickets or carnets or anything else that can't be sold against an itinerary?

I have a print out in my bag showing the restrictions at the time of purchase but I am sure most people won't go to those lengths and they are also easy to fake...

Season tickets very rarely have any time restrictions, and only Off Peak Carnets would have time restrictions.
