On Wednesday 27th I saw a catering trolley waiting to board the 0954 waterloo service at Winchester; I think I have seen this happen before some time ago.
This strikes me odd as AFAIK there are no facilities or space for such at Winchester.

Does anyone know or have an idea why this fully loaded trolley complete with a rail Gourmet sales person was at Winchester?

Possibly, except but to reach that platform you have to go up the stairs from the subway unless you want a 10 min walk round.

In thinking about that it must have come up from Bournemouth where facilities exist, possibly in order to provide the advertised service on 2 trains with 1 trolly?

today I will mostly be at home decorating
You said the trolley got on the 0954 to Waterloo, so it MAY have been on its return journey to Waterloo having worked down on a train earlier.
I am quessing it would normally have gone to Southampton Central, crossed over platforms to work back to Waterloo, now if the outbound journey was delayed it might not have had time at SOU to get across so would have got off early (Winchester) to be able to get on the booked service, if they had tried it at Southampton Airport Parkway it might not have had time, its only 10 minutes from SOU to SOA.
Another trolley would work from SOU down, one trolley wont go all the way from WAT to Weymouth.

Nope never seen a trolly past Bournemouth,

But to get from plt 1 to plt 2 at WIN involves stairs (no lift) from the subway or a lengthly walk up a buisy road crossing it twice and then walking all the way through the car park from one end to the other and probably would take just as long a train to SOA would take.

I wasn't necessarily expecting anyone to have a definitive answer, just suggestions like yours, as like you say it is unusual.
