Can I change trains using an off peak ticket?

Hello,
I am travelling to Watford Junction from Northampton sometime next week, and I am wondering if I can change train at a station on the line whilst travelling there?

Example of what I mean:
9:05 from Northampton to Euston (changing at Berkhamstead or Hemel Heampstead)
then 9:56 Tring to Euston (wanting to go on this as it is a 319) (boarding at Berkhamstead or Hemel Heampstead)

Yes you can provide the 0905 doesn't arrive in Euston before 1000 (assuming you are using the Off Peak Day Return; the restrictions on the Off Peak Return are based on starting after 0930 and so is not valid).

Thank you for the information, the 7:54 Birmingham New Street to Euston (departing Northampton 9:05 and arriving Euston 10:18) will be the first train that I am able to get, then I will swap at Berkhamstead (arriving 9:46), allowing me to board the 9:56 Tring to Euston (10:01 at Berkhamstead), arriving at Watford Junction for 10:16.

Just be aware the Off Peak (period) return has different restrictions - not valid from NMP before 0930. I assume you are using the Day Return.
