I will have an off peak return from rishton to high Wycombe for this coming Saturday returning sunday. Will I be able to use the return part of the return to travel into London from High Wycombe and then resume my journey on the Sunday to rishton.

I'm assuming you'll have the £94.80 (Railcard £62.55) Rishton - High Wycombe route + via London ticket, not the £70.90 (Railcard £46.80) Rishton - High Wycombe route via Banbury.

Yes, that ticket allows break(s) of either or both legs of the journey.
