On Easter Saturday we'll be arriving in Bordeaux on the TGV from Paris at 1714. Then the slow train to Bayonne at 1719 if it's doable, or 1845 if not. What are the chances of making the 5 minute connection? We have interrail so booked on the TGV and can be flexible on the onward train.

If the TGV arrives on time, then it's just about doable. You'll have to stand at the door when you pull into the station, otherwise you can lose a lot of time just waiting to leave the TGV. On top of that, doors can be closed 2 minutes before the published departure time.

The down TGVs normally run into the island platform 2 / 3 so you may be lucky with a cross-platform interchange. However, with the introduction of EMUs, the Hendaye TER services have taken to using the south end bays A/B/C (right at the end of platform 1) - the 1746 today went from Platform C for example. It would be very challenging to reach these in time!

Wouldn't recommend. I mean I missed a 5 min connection at Peckham Rye the other day and I know it well, so doing it in an unfamiliar station is not going to happen
