Is it possible to buy an off-peak return or would Seaford not count as a "permitted route". If not, is it possible to buy a return to Seaford and an additional single from Eastbourne to Lewes (or a return to Eastbourne and a single from Lewes to Seaford)? Will be walking between Seaford and Eastbourne.

The double-back is pretty spectacular to be counted as a "route."
Return plus single either way round is fine as there are rarely any break-of-journey restrictions on Offpeak tickets.

One possible solution which could be cheaper is to use the Route 12 bus which links both Seaford & Eastbourne (also Brighton) which should be £2 at the moment.
Comparing the two, it looks to be cheaper to buy a return to Eastbourne then a single to Seaford.
As suggested above though, a return to Seaford and the bus back from Eastbourne to Seaford would be cheaper. Its a fairly scenic route, too.

Hi,
An option that's slightly more than a Barnham to Eastbourne return plus a Seaford to Lewes single (£19.30 & £3.30) is to buy a Southern Daysave ticket for £23.50. https://www.southernrailway.com/tickets/ticket-types-explained/daysave
That will give you unlimited off peak travel on all Southern trains and you can freely choose where you go and when. You can go to Seaford and get back on in Eastbourne or you can change your mind at the last minute and do it the other way around.
It also gives you the option to go home a different way (Eastbourne - Lewes - Gatwick /Change/ Gatwick - Horsham - Barnham) on the same ticket for no extra cost if that's of interest.
You do have to buy the Daysave tickets in advance though - you can't just buy one at the station on the day.
Enjoy the walk - it's been while since I did that route but I remember it was great.
