LNER announced some engineering works on my holiday in November how would I find out if I can book one of the newer type trains as I don’t like the tilting ones? Is there a way to check which ones run?

The only guarantee would it would be a class 390.@Citybreak1. Are you travelling from London to Scotland? Doubt you'd ever get to know just which trainset Avanti would be using on a particular Anglo-Scottish service this far ahead of travel. Journey could still be made via the WCML using other operators, with intermediate changes, but would likely take much longer.
The newer Hitachi units aren't allocated to any of the Anglo-Scottish services in any case (barring the Carlisle - Preston S&C diversions for a couple of weeks next January, as a partial exception).@Citybreak1.
