Well currently onboard the 20:06 from Glasgow - Preston.

The guard was scanning/marking tickets at the barrier, he said nothing I parked myself in first class , no announcements or anything after Motherwell he walked through and said go to the on board shop for complementaries, suffering from a rare muscular disease I was bloody annoyed but reluctantly walked down and fell over banging my head and knees in the process

On arrival at the onboard shop, nothing appealed to me , I got a coffee, one other person in first class said he uses this train every evening , rarely is anyone else in first class or a first class service provided between coach C and coach J there was no more than 30 passengers in total

This frustrated me , why do they charge the high fare when the coach is nearly empty and no first class service ?

They should put unavailable on first class tickets or advertise there is no first class service.

Now I have to put in a complaint and just get the difference in price which won’t mount to much now , I’m really annoyed at such a rip off when they know they won’t provide the first class service

You should get a refund of the difference in fares.

It's often the same on the last LNER from Newcastle to York/Doncaster on a Saturday evening, nearly always no service provided whenever I take it.

Poor from the Guard; that's not really how to do the job. Unfortunately Avanti gave a few like that. The company isn't willing or able to do anything about it.

On what grounds? The OP got to travel in the First Class section of the train, didn't they?
Did they receive the advertised service? The difference between Standard Premium and First is the complimentary offer.

Compensation for a lack of the advertised offering should be given.
