If tickets are ordered via a TOC App and paid using Apple Pay if the TVM has a contactless card reader can this be touched to release the tickets or does a payment card have to be inserted?

A few TOCs have TVMs that can handle contactless for ToD collection - I think Southeastern can, but GTR can't

Apple Pay bookings are set to 'any card' collection - probably best to have an(y) actual card with you.

In all honesty, I'd advise against using ApplePay and ToD. If you have to use ToD then make sure you carry a card with you so that you are protected from collection problems, even if using a site or payment method that allows any card collection.

It worked for me on a Northern ticket machine, using my Apple Pay to touch the contactless device.

As of late, most GWR and SWR Scheidt & Bachmann TVMs can now do contactless ToD collection.

I don't remember if Greater Anglia's do (I think they might?) but GTRs definitely don't yet, unfortunately.

This depends entirely on the retailer used (some set Apple Pay bookings to 'any card', others don't) and the operator of the ticket machine used to collect the tickets (some allow contactless collection, others do not).

For now the safe option is to use a physical card for any bookings where you will be collecting the ticket.

Do you mean any card collection? I'm not sure that collection without a payment card is an option.

I was under the impression Any Card was intended to be No Card by RDG for many years.

Nothing gets checked or stored for any card anyway, so there's no benefit to asking for a card to be presented.

from June 2023, new systems must request the CTR reference from the customer before asking for a payment card

For ‘any card’ bookings, the system should not then request a payment card at all, and print the tickets once a valid CTR is entered

Unfortunately it wasn't enforced retrospectively on existing TVM manufacturers with systems that already existed (firmware update).
