This is probably a silly question, but also a slightly cheeky one. Anyway...

Many Rovers come with a requirement that they can only be used on certain days in any given period (e.g. Freedom of Scotland, 8 in 15). Could you in theory purchase two such Rovers, and thus use them on alternating days (i.e. in the above case 16 days in 16)? If yes, are there any out there (either solitary Rovers or two separate ones) that anyone could recommend, and has anyone ever attempted this?

Can't see a problem with that.

Then given that most guards don't pay attention to the date boxes anyway, you know... Not that there's much I can say about that as I wouldn't condone it

Absolutely fine. Such Rovers are marketed as 'X in Y' rather than a continuous period because that's much more useful for most travellers, not because of a desire to restrict the amount of travel you can do.

Wouldn't even have to alternate them- you just use one for eight days straight, then the other for eight days straight.

I have used a Freedeom of the SW 8 in 15 and then used day rangers to cover the branches in Cornwall, Devon & the Welsh Valleys.
