A ticket like this, through London, is valid via all the routes from origin to London,
plus all the routes from London to destination.
So I think that I can confidently say the answer is that you can do all of the things you wish without checking,
but I will check...

Direct trains are always valid (none in this case).
The shortest route on regular services (inc. routes up to 3 miles longer) is always valid (good luck working those out, it's tricky to do as you'd have to look up the routes to the various London Terminals. Railmiles does help but it doesn't know which routes have regular services. You are supposed to use the NRT but this would take many hours for a journey like this!)

I don't understand what's in the brackets. HS1 is a permitted route between Ashford Intl & London and also between Faversham & London.

Route High Wycombe is £48.00 for an SVR. If you get this ticket and travel via High Wycombe and on your way back you decide to return via the WCML or via Oxford, then you should be charged an excess of £6.80 (the difference is £13.60 and you pay half that to change the route on one portion only).
- Would I be able to start at Birmingham International on the way back? (technically speaking its in between Shirley and Aylesham and the ticket price is the same!)
Providing Birmingham Intl is on a permitted route between Aylesham and Shirley, yes you can. (To check that, consult the maps above)
(obviously not the first two at the same time though! although for the second one I couldn't find any tickets for that route on the Southeastern Website!)
