There are still ticket offices in Switzerland, though those at smaller stations have generally been closed over the last few years. Mostly, they are only used for complex purchases (e.g. travelcards, changes to bookings, international tickets), not for purchasing point-to-point tickets.

The 320 km/h section is between Avignon and Aix-en-Provence (Wikipedia provides details of line speeds) and this train does not run on that section.

No, that's not the case, it runs as a service train (with no other coaches) and there is no supplement. And no, I didn't know about the two coaches from the 1930 service.
