And would I be able to break the out or return journey ?

Should be, assuming it's an Any Permitted ticket (and not a specific route or company).

Not sure about the break of journey though... someone else?

Break of journey is permitted on both portions of the Any Permitted Super Off-peak Return and Off-peak Return from Edinburgh to London, and the same tickets from London to Edinburgh.
