How do tickets to/from London Underground Zones work?

I want to learn more about the validity and routeing of tickets to/from London Underground Zones, so if there is some document that details them, please do share it with me

Here's some specific questions relevant to some of the edge cases I am curious about:
Can you use a Shepperton to LU zones 234 ticket to do a journey like Shepperton -> Teddington -> Richmond -> Highbury and Islington -> Finsbury Park? TFL Single Fare finder does not find an avoiding zone 1 fare for this journey, is that ever relevant?
How are break of journeys and routes involving walking handled with this ticket? Could you walk between any unrelated stations and say that walk is still a part of a valid route? Or are they based on existing OSI links? Are they based on National Rail or TFL OSIs?

Indeed. But Single Fare Finder and OSIs are for contactless and Oyster. TfL fares have no concept of break of journey.

For a journey like this you'd buy a Shepperton to Finsbury Park route 'not via London' rather than a U Zone ticket.

The best thing to do is state the journey(s) you wish to make, and we'll suggest the tickets.

Whilst no doubt very true, this is very much a "give a being a fish" answer, but I and I suspect our OP are more interested in the "teach a being to fish" strategy. BR FARES tells us Shepperton to Z234 has two variants: via Kew Gardens (notionally a national rail route) and via Wimbledon Park (a LUL route, which in practice seems to limit us to western branches of district/piccadilly- see below).

From Shepperton, Victoria Line Brixton seems a reasonable destination for Z2 (change at Vauxhall?) but it seems I would be off route for both variants. BR fares selects a Z234 ticket for Arnos Grove reasonably enough. Looking at Elverson Road DLR station , BRFARES can only find travelcard tickets, but no singles/returns, whereas I would have thought NationalRail Kew Gardens -> Stratford then DLR to Elverson would comply? Is this a BRFARES artifact?

The BRFARES footnotes on these types of tickets say "Valid for one Underground/DLR journey in London Zones 2–4", which I suppose rules out mode switching. So NR->Wimbledon, LUL->West Brompton, NR-> Willesden Jn, LUL->wherever (e.g. kilburn park) I would have thought is not allowed.
