Oxford Parkway to Hastings return

I want to travel from Oxford Parkway to Hastings on 3 March and return on 5 March. This is a trip I've made a number of times before. I'm sure in the past I have been able to buy open return tickets for this trip, but National Rail is saying return tickets are not available. Is this correct? I can buy open returns for OXP-MYB, and for London all stations-HGS, and in fact this would be cheaper than two singles for the whole journey, including tube fares.

Also, if I have a London terminals-HGS return, can I travel out from Charing Cross and back to Victoria, breaking the return journey to go to Brighton by getting a single from Lewes to Brighton and one from Brighton to Haywards Heath? Would I have to get on a HGS-VIC train at Haywards Heath, or could I get on any train?
