I've seen several light engines using the light railway and engineering trains around and was wondering if anyone knew why or if anything's going on?

DB had route learners out on the light railway on Monday and Tuesday this week.

There's a blockade this week between Humber Road Jn and Immingham West Jn for track repairs in Immingham docks. It means no access to Immingham Bulk Terminal or the HIT terminal, so the biomass trains are running from Hull instead.

Trains can access Humber refinery from the west, but all routes through Humber Road Jn must be blocked because light engines between Humber refinery and the DB stabling point at Immingham are running via the light railway.

The Tinsley to Immingham Nordic and return steel train (6D03 / 6J03) has run via the light railway on Tuesday and Wednesday night this week, but I don't think there's been any daylight freight.

For those not ‘in the know’ which line is the ‘light railway’?

It's the line from Immingham East Jn to Marsh West Jn at Grimsby - a train entering Immingham Docks this way would pass through Habrough instead of Ulceby, and continue towards Cleethorpes before diverging at Marsh West Jn and approaching Immingham from the east. There's a cab ride of it here filmed in 2020, the line gets used occasionally for diversions:

At 28 mins into that cab ride video you can see the premises of "Copes" on the right hand side (just before Pyewipe Road signal box) where aggregate is now offloaded (as seen in the video below at 5:30).
The GBRF aggregate trains arrive from the Immingham direction, offloading is done from the lineside, and they depart along the light railway towards Marsh West Jn.
