When we travelled from Salzburg to Venice last year, and later back to Vienna, OBB's NightJets were not very lengthy, even though these were combined (as is common in Europe) from/to Vienna and Munich.

Is there a website that shows the normal number of cars ("wagons") on each scheduled NightJet (including ones that attach or detach cars en route) and how many berths/couchette spaces/seats there are usually on each?

It has 7 carriages, but since between Salzburg and Stuttgart is attached to the portions to Budapest/Rijeka/Zagreb to make 10 carriages, that is probably the limiting factor.
Dont't forget this is just one of 3 night trains crossing the alps each night, and arguably the least significant compared to those to Rome and Milan.

Also, there is simply not enough stock available.

The coverage varies year by year, depending on the sources available and the time the administrators have. They have the Italian consists for 2020, in the case of night trains I don't think much has changed since then.

Thanks: most helpful, including how at night one can catch sleeping car services from Palermo that combines at Messina Centrale for onwards travel to the Italian 'mainland.'

My Summer 2022 European Rail Timetable printed copy also indicates most times have not changed, or if so, barely. After all, if the trains are carrying good numbers, the subsidy and sufficient staff and rollingstock are available, why muck around with the timetable unless the number of other trains on the diagram radically rises?

The only change I know of is that the Milan-Sicily theoretically has an Excelsior sleeper in one portion and has been running via Bologna not Genoa some nights.

Travelled on this beginning of May and it did indeed have Excelsior cabins and go via Bologna.
