Yes, that's by far the cheapest option. The £16.10 Anytime Return is very good value.

There are standalone validators in two places at Farringdon. First of all, next to the couple of steps between the southbound Thameslink and northbound Sub Surface (Met/H&C/Circle lines) platforms. Secondly, roughly half-way between the northbound Thameslink platform and the Elizabeth line - at the intermediate floor where you have to make a 180° turn to/from the Elizabeth line escalators.

Is that perhaps why another standalone wasn't placed for EL journeys on the southbound platform? I've seen that reader before and used it once, but its definitely not well signed.

I have stood and read that sign and I still cannot make up my mind - so I ignore the validator.
Whether you need to use it depends on what you are doing. I have used a couple of times to switch between Oyster on the Elizabeth line and KeyGo on (northbound) Thameslink.

At the top of the escalators, on the left.
Nearish. From the top of the Elizabeth Line escalators as you U-turn right and walk forwards (past the exit escalators) and onto the Northbound Thameslink platform it is on your left IF you look behind you !.

As he is returning on a public holiday, it seems that there is a cheaper combination of tickets as well compared to using the £16.10 ticket plus a peak + off-peak Oyster journey to Stratford, assuming he doesn't make other travel inside the zones.

Gatwick Airport - London Zones 1-6 Thameslink only Off-Peak Day Travelcard (16-25 Railcard): £12.05 (Friday, discard the outward journey)
Gatwick - Stratford Oyster off-peak: £8.05 (bank holiday)

Using this combination, no touch at Farringdon is required.

Even cheaper options are available by avoiding zone 1 and/or touching in/out at East Croydon.

There are two. Coming from the EL after you've turned towards the exit escalators there is one on the left wall just before the escalators. There is also one on the NB Thameslink platform to the left side just after you join the platform.

plus a peak + off-peak Oyster journey
As Stratford to Farringdon ends in zone 1 it will be two off-peak journeys. Your comments about avoiding zone 1 and/or splitting at East Croydon still apply though.
