Yesterday (Wednesday) the king and Queen consort visited York and then Doncaster, both cities with strong rail connections. Although I have searched newspaper reports I cannot find any indication of how they made their journeys. Was it by royal train? Or by polluting road transport?

HM certainly arrived in Bradford on Tuesday mid morning by helicopter (Bradford GS grounds).

Even if they had originally planned to use the Royal Train, presumably they would have changed plans once the strikes had been announced.

The Royal cavalcade would still have been needed for the station to mansion House part of the journey if the Royal train had been used. The vehicles would have gone empty from york to Doncaster. The use of 1 or two class 67s really wouldn't have improved the overall effect on the environment.
Rail is not automatically environmentally friendly

The Royal train is almost always hauled by class 67 Diesel locos, even on fully-electrified routes. This may change with King Charles and his environmental passions, as well as the growing prevalence of Bi-mode locos, but for the moment it's a pair of poshly painted Skips.
