It definitely had 3 at one point as it had a bay for the line to whitby and then 2 on the york to Scarborough section

Difficult to tell conclusively from the 1911 OS map for Malton, due to a covered roof at the station, but inclined to agree with @leedslad82, very possibly three platforms, of which two were on the through lines, and a third was a bay platform, heading off in the Whitby (via Pickering) direction.

Two through and a bay is correct, so three.

Wikipedia suggests:
Though Malton station now has only one platform in use, at its peak, there were two through platforms and an additional bay platform serving (mainly) Whitby local trains. The George Townsend Andrews overall roof was removed in 1989 and replaced by the canopy recovered from the Whitby platform.

More information here: http://www.ryedale.co.uk/ryedale/social/maltonstation/maltonstation.html
A visitor to Malton Station today could be forgiven for thinking it was no more than a glorified halt on the York to Scarborough line, but for most of its existence Malton Station was a very busy place employing well over a hundred staff at its peak at the beginning of the 20th Century.

Malton was a weird station when it had two through lines as it had:
Platform - single track - Island platform - single track
So although there were only two through lines, there were 3 platform edges, Eastbound trains could be boarded from either side.
The Whitby line was a dead end, giving a fourth platform edge.

Malton also had a branch line to Driffield which would use one of the platforms at Malton.

Four platform edges is actually the correct answer - there was a west end bay platform, though when the track was removed (and whether it was actually ever used for passenger trains) I don't know - see https://www.flickr.com/photos/blue-diesels/43540378610
I have made a 3d model of Malton Station in its heydayin the Trainz simulator and the west end was , as far as I know, only used for goods though I think an NER rail motor would fit in there. I will check it later today.
You can see it in my video at 53.00

The west end bay seems to have been removed relatively early (no track shown on the SRS diagram, confirmed by the only photo a quick search throws up but which might be pre WW2. I would guess it was a parcels dock or similar.

As the West end of the station had a number of Railway Agricultural store buildings, is it more likely that a Platform there would be a Cattle Dock?

More likely parcels as the only access was via the retractable bridge between the double sided platform under the overall roof. When the station was originally built it had 2 conventional side platforms under the roof. In this aerial view of the station circa 1935 there appears to be a long vehicle in the dock and a short brightly painted vehicle.

So, where are we with the OP's query? Three platforms? More?

Does a platform edge not for passenger use count as a platform?

It would only count as a platform if it was numbered which a loading dock wouldn't be. York has a continuous platform 3 and 4 but is separated by signals so it counts as two separate platforms.

How would the all platforms at Malton be numbered?

== Doublepost prevention - post automatically merged: ==

What I think:
Current PlatformPlatform 1
Bay PlatformPlatform 1a
Island Platform Facing Current PlatformPlatform 2
Island Platform Facing SidingsPlatform 3

Almost certainly would have been Bay - 1, Through (Current Face) - 2, Opposite face - 3, Single sided island - 4.

The use of letter suffixes for separate platforms is (largely) a modern thing.
