For an upcoming trip I have been given seats 41 and 42 in coach H, and on the returning trip I have 79 and 80 in coach B. I am aware the 79/80 in coach B are priority seats, but I have no idea about the positioning of the seats. Most importantly, are they not seats blocked by the window pillars?

The seat plans are available at the following link, though sadly they don't show the windows:

EDIT: Apparently I cannot read

From memory I'm afraid B 79/80 are a pillar, the row behind gets an almost full window.

41/42 in H I'm not sure I'm afraid, I only remember the ones by the doors, though I suspect also pillar as I think most of the tables are aligned and they're just behind one.

Sorry not to be the bearer of good news, you may wish to head for the unreserved coaches (which I don't remember but there is a recent thread about them).

Coach G on a 9 or 10-car GWR IET is unreserved. On LNER trains, I've read Coach C is unreserved.

Is it possible to change a seat reservation? I bought the tickets at my local station.

I doubt you can change one, but you can make new ones on the GWR website, you could keep adding them to the basket until you get one you like then remove the ones you don't, assuming that works. Unfortunately I don't know all of the seats that are aligned, but I do know the third row on the non-luggage-rack side and the second row on the luggage rack side has a full window, e.g. 9-12 and 81-84 in B.

Last few times I've used GWR the reservations haven't worked anyway, and GWR's policy if they aren't working is that they don't apply.
