I live in a small town in Ayrshire without a car, so getting at least to glasgow can take hours which doesnt give me a lot of time, but my priority to bash would be
Class 158s
Class 170s
class 318s
Class 320s
Class 334s
Intre7city HST
Now most of these are easy, 158/170s i could just do a few runs to anniesland, 318s, 320s and 334s i can just take small hops on the argyle line, however with the hst i would have to go to somewhere like inverness or aberdeen and back, what do you think?

You could easily use an HST on a Glasgow-Aberdeen or Inverness working and bail at Stirling and catch the next service back... you don't have to go all the way to the end of the line!

I notice today the 09:30 Edinburgh Waverley to Aberdeen is operated by 43133 with 43141 at the other end, what about bashing these between EDB and Haymarket if the times fit together with other 158's and other odds and ends chucked in for good measure.

For the HSTs you could do a loop via Perth, Inverness, Aberdeen, and Dundee. They run at least some of the time on all of these routes.

Or get off at Stirling or Perth as mentioned above.
