As the only way to be certain of sole occupancy of a cabin is to buy a first class ticket, is it practical to buy two standard class tickets for one cabin, and not use one, this can often work out cheaper than one first class ticket, if bought in advance.

The other option is to buy a standard class 'solo' berth ticket which is cheaper than 1st class. I don't know what the NRCoC say, but I don't know whether one person can use two tickets for the same journey- i.e. usually the attendant would mark the berth as 'available' due no a no-show reservation and re-sell it.
I think if you bought 2x standard class tickets for a normal train, and a passenger got on who tried to sit next to you - I think you would certainly be on the back-foot if you tried to claim that both seats were yours.
I do wonder about taking extra luggage and buying a Accompanying Animal/Article ticket...

Scotrail website says 
ur Caledonian Solo supplement provides Standard Class interavailable ticket holders exclusive use of a Standard Class cabin for £54 per single journey. Solo supplements are available in conjunction with Anytime, Off-Peak, Super Off-Peak and Weekender tickets. Hope this clears up any confusion !
of course cheap way is book 2 bargain berths and hope sleeper steward is too busy to notice !!
