Probably because a certain large group of enthusiasts are deliberately trolling Lothian and taking photos of the interiors at every chance possible!
Which is childish behaviour by those (I have not personally seen it however) but I think the "ban" was also quite stupid in the general context given no data is shown in any interior shots which is what GDPR covers.

Can hardly blame them. The childish thing was unenforceable policy!

If I were a bus operator I wouldn't be comfortable with members of the public wandering round my vehicles when the driver is meant to be having a break at the terminus.

If I were a driver, after the stresses of dealing with a cross city journey and all of the modern hazards of driving, I'd be wanting five minutes peace, stretch my legs, read of the paper (maybe even a quick fag).

In the grand scheme of things, it's hard to feel sorry for enthusiasts upset that they can't take pictures at the termini.

I don't know the full story, and I wouldn't be hiding behind GDPR if I were doing Lothian's press releases (I hate the way that organisations hide behind things like Data Protection/ Health & Safety as excuses not to do things) but I'd rather that buses had relaxed drivers (rather than drivers unable to relax during their break at the terminus because they had to keep an eye on people remaining on the vehicle to take pictures.

I don't think you understand the full point or situation. It's not about stopping enthusiasts taking photos at termini.

Lothian were trying to stop enthusiasts taking photos of vehicles whether that be interior photos or exterior photos of vehicles in service, following strong backlash they withdrew the latter part and are now trying to stop not just enthusiasts, but any member of the public taking any sort of photos of the interior, regardless of it's at a terminus etc.

Why do they want to stop people taking photos of their buses both outside and in?

Perhaps the Lothiancity brand will initially be used for the Tollcross to Leith Walk services. Notably the 10, 11 and 16. The 10 remaining with the current E400's with the 11 and 16 obviously now getting the E400XLB's. Although it's probably more likely that 213 is a spare vehicle for the XLB's

More info here:
Routes for our new Enviro400XLB buses are revealed
February 14, 2019

We can now reveal, our new 100 seat Enviro400XLB buses will start operating on our Services 11 and 16 early next month (March).

Our Service 11 operating from Ocean Terminal to Hyvots Bank and Service 16 connecting Silverknowes and Colinton. Together, these popular cross city routes carried over 10 milllion customers last year.

These buses can carry up to 129 customers each. They have been designed with a front and middle door to speed up the times spent at bus stops and have been built to even higher standards than bus users in Edinburgh have become accustomed to, with comfortable high-backed seating, Wi-Fi, USB charging, mood lighting and audio-visual stop announcements.

Richard Hall, Managing Director, said:

The city is changing and public transport operations must evolve to meet the growing needs and expectations of our customers. Core cross city routes are an important piece of our network, transporting millions of customers quickly and efficiently to their destinations every week.

Services 11 and 16 are high frequency core route services, together carrying over 10 million customers across the city with high demand in the morning and afternoon peaks, as well as at weekends. By deploying these new vehicles onto these services to cope with customer demand patterns, we will be able to change how we deliver these services for the benefit of our customers and the areas in which we operate.

We look forward to seeing these vehicles out and about on the streets of Edinburgh providing the next generation of public transport.

To ensure the smooth introduction of these vehicles to the streets of Edinburgh, we have an in-house project team carrying out route assessments and familiarisation training. Look out for them travelling around over the next few weeks.

I will admit I am a little disappointed that the 31/37 didn’t get these new buses, however I do know the 11/16 are busy enough so it makes sense i guess, it should lift up a lot of passangers between Morningside and Leith anyway! will definitely be looking forward to trying these new buses in action!

11/16 will be interesting to see how they stop at Morningside as some of the stops are small platforms that stick out between parking spaces so will both doors fit on them. Will also be intetesting to see them go round the turning circle at Hyvots Bank

My main concern with these vehicles has always been dwell time.

There might be up to 60 people all descending down a single staircase, mingling with potentially another 60 on the lower deck. And then you could have 120 or more passengers all queuing up to interact with the driver. Maybe not a complete turnover of everyone on board, but I can easily see the bus standing at some central stops for 4-5 minutes. Given Lothian's "board-at-flag" policy, it seems more than likely that a queue of buses could be lined up behind before an Enviro400XLB is ready to go.

Isn't the point of having a centre door so that mingling between entering and alighting passengers is reduced?
Also, the "board-at-flag" policy mainly applies to passengers who are boarding rather than leaving - you should be able to leave while the bus queues behind others. To me, allowing parallel boarding when using this type of vehicle seems to make even less sense. The bus could be obstructing an otherwise empty stop for the 4-5 minutes that you suggest boarding would take.

This is classic mistake of lothian in edinburgh, glasgows buses deffinetly get passengers off and on quicker.

Of course if a driver doesn't do this in Edi the punters cant wait to complain
