Does anyone know of anywhere that lists when Advance tickets are actually released?

Currently all I know of is this page on National Rail, but it hasn't been updated for two weeks, and isn't massively helpful in any case.

I'm trying to book a Eurostar trip to Paris in July. We've got our Eurostar tickets booked already, but I'm worried about missing out on the cheap advance tickets from Birmingham to Marylebone.

Normally it is 12 weeks in advance, but due to delays in finalising timetables because of engineering works train operating companies (TOCs) are working on A 6 week turnaround time. It may be worth Tweeting your TOC as they can give an exact date when they're released.

I think that is the case, although XC are selling 12-weeks in advance but with a health notice about changes to times. I assume that is just a decision that each TOC has made (more profit and fewer scruples the XC way, although also more convenient to some extent).

Not necessarily more profit. If you book an advance for a train that is subsequently cancelled (even due to supposedly planned works) then you are entitled to a full refund OR you can travel by the alternative methods they set out at the time and if you arrive at your destination late you are eligible for delay repay in the normal way. It’s more of a risk for the operator to do this.

VTWC still haven't released Advance tickets for the weekend of 2/3 June. They can't even achieve the amended 6 week deadline.

This really isn't acceptable as people need to make arrangemnts.

If requests for this are, by policy, incorrectly rejected - as they are in a number of cases - then the procedure could still deliver a profit. It would represent a breach of contract by the TOC, but the likelihood of there being any sanction for this is miniscule.

Should open either today or tomorrow depending on the route you require.
