Does anyone know what was the main type of traffic that would have seen the use of the large sidings site there?

The L&Y was the principal line serving the various Lancashire cotton industry towns, which once led the world in cloth production. All raw cotton is imported to Britain, typically from the USA through Liverpool. Fazakerley handled the bulk of this traffic, bringing it together from different ships and docks and then making up trainloads for various destinations.Traffic to/from the docks, and freight to / from the Liverpool area. So probably just about any freight that travelled by rail up to the 1960s - coal, minerals, food, factory produce, etc.
