Why are Grand Central given such grotty paths between Doncaster and Bradford?

GC's trains are so lightly loaded between Wakefield and Bradford that it makes very little difference to them how long it actually takes.
I think you'd be surprised at how busy Halifax is becoming. Bradford can be busy on some services and not on others - I find most passengers at Bradford are price sensitive, however there is a decent percentage who takes GC because they dislike the seats of the Azuma.

Agreed there, in my experiences those trains empty out at Doncaster/Wakefield on Bradford bound services. Some services can still be busy (i.e. the 19:XX London - Bradford) but it's not massively busy

If someone books a seat from, say, Mirfield to Doncaster, then GC can’t sell that seat for someone going through to London and make them more money.

That's not really an issue though as long as people don't choose their own seat, because there are always enough boarding / alighting for Doncaster - London.
